The Salazar family is proud to make authentic Mexican cheeses, which they began making in Mexico with milk from their own farm. Now that they’re in the U.S. (Brentwood CA), they produce Queso Fresco. This Fresco Style cheese is fresh, mild and slightly tangy.
Defendi’s Taleggio is a semisoft, washed-rind, smear-ripened Italian cheese that is named after Val Taleggio. The cheese has a thin crust and a strong aroma, but its flavour is comparatively mild with an unusual fruity tang.
